Here is the super easy basic cupcake recipe I use. To it, you can add any flavours you wish. The base recipe will make about 12 small fairy cakes or 6 generous cupcakes. If more is required just double up on the quantities.
Ingredients
100g Self Raising Flour
100g Sugar
100g Marg or butter
2 eggs
Oven Temperature - 180C, 350F or Gas mark 4 for 20 to 25 mins
Method
Place marg/butter and sugar in a bowl and beat together until pale and creamy ( I use a hand mixer, but a wooden spoon and a lot of elbow grease does the same job haha)
Add 1 egg - beat in
Add the flour a little at a time mixing each time
A small amount of vanilla essence
Add 2nd egg - mix in
Add the remaining flour - mix until creamy.
Spoon mixture into prepared paper cases until just over halfway to the top of the cases
Bake in the centre of the oven until golden brown (about 20 to 25 mins)
Additional flavours can be added at Stage 5. Ideas for flavouring, cocoa powder or drinking chocolate powder, instant coffee diluted with a small amount of hot water, vanilla essence, orange essence, lemon essence, finely chopped crystalised ginger, fruit (raisins currents, sultanas that sort of thing) Peanutbutter, the variations are endless.
When cool you can decorate your cakes with butter icing.
